In all McCall's professional courses, the student will be shown practical and speedy techniques needed to meet the demands of a small restaurant, resort, caterer, bakery, chocolate or cake shop. Our classes are designed to benefit the beginner as well as the professional.
GUM PASTE (3 DAYS) with Kay Wong $375.00
For those from out of town, we have combined our Gum Paste I, II and III part time classes all into one. From introductory level to advanced level, many beautiful flowers will be made. Students receive a certificate of participation on completion.

ADVANCED GUM PASTE (3 DAYS) with Kay Wong $375.00
More intricate flowers will be made in these 3 days. Flowers include: Iris, Honeysuckle, Tulip, Hydrangea, with corresponding leaves and buds. Students receive a certificate of participation on completion.

SWISS CHOCOLATE TECHNIQUES (5 DAYS) with Nick McCall & Kay Wong  $575.00
Learn tempering of pure chocolate, hand dipping, cooking fondant and starch moulding. Make delicious centres from nougats, nuts, marzipan and fondant. Liqueur chocolates, truffles and hollow moulding of small and large pieces are also taught. In the making of a cut-out chocolate box, you will use chocolate modelling paste to decorate. Be prepared to take home some delicious creations. All recipes and patterns will be provided.

PROFESSIONAL CAKE DECORATING (10 DAYS) with Kay Wong  $975.00
Students will learn the fundamentals of cake decorating and icings. This course covers piping skills, borders, sprays, writing, flowers, colour flow and covering cakes with rolled fondant and buttercream. Gum paste flowers will include; rose, calla lily, daisy, orchids and filler flowers. Students will make arrangements with ribbons, bows and ruffles. Complete your own 3 tier wedding cake, an 8" Australian cake, a special techniques cake and a 10" special occasion cake with buttercream. Students receive an intermediate certificate on completion.

PROFESSIONAL ADVANCED TECHNIQUES (5 DAYS) with Kay Wong  $575.00
At long last, for those students who find it difficult to complete their Advanced Master Cake Decorating Certificate on a part time basis, this is the course for you. You will learn Advanced Techniques, Flood Work, Pastillage, Cocoa Painting, Figure Piping and more Gum Paster Flowers.

Tools Required: All Tools used in the 10 Day Professional or from Introduction, Intermediate, Wedding Cakes, Australian Method, Gum Paste 1, 5 Petal Cutter, Peruvian Lily, apron, and pencil.
Prerequisite: 72 hour Master Cake Decorating Certificate.
